The Piehole didn't start in a boardroom. It started at a kitchen counter in 2014, with a secondhand oven, a bag of flour, and an obsession with getting the crust right.
Fourteen years later, we're still doing the same thing — just with a bigger oven and a deeper appreciation for the craft. Every pie that leaves our kitchen carries the same promise we made that first night: nothing rushed, nothing artificial, nothing forgotten.
Our dough ferments for 48 hours. Our sauce is hand-crushed San Marzanos. Our cheese comes from a dairy in the Skagit Valley. The rest is just fire, timing, and a little bit of stubbornness.
